Concession Instructions

Making snow cones or cotton candy for the first time can be intimidating but it really isn't hard. After making your first snow cone or spinning your first cotton candy, you will be the party pro!

Here are the instructions for making Cotton Candy, Snow Cones and Popcorn.

COTTON CANDY

SAFETY PRECAUTIONS
We value your continued safety above all else. Please follow these guidelines when using your
equipment to prevent injury and maximize product performance:

  • No direct contact to equipment by the general public should be allowed when used in food service locations. Only trained personnel should operate this equipment. Carefully read any and all instructions before beginning operation of the equipment.
  • Floss head reaches high speeds during operation. To avoid injury, NEVER
    place body parts or objects near the floss head assembly while motor is
    running. Please keep spectators away. We are not responsible for any
    injuries that may occur due to failure to follow safety precautions.
  • Any alterations made to equipment by anyone other than certified Paragon
    personnel will void warranty and may also create unsafe working conditions.
    NEVER make alterations to the equipment.
  • Machine must be properly grounded to prevent electrical shock.
  • Do NOT immerse any other part of this equipment in water. Doing so may
    damage equipment and prevent it from working properly.
  • Always unplug equipment before cleaning or servicing to prevent electric
    shock.

OPERATING INSTRUCTIONS
Be sure equipment is connected to properly grounded 120 volt power supply with 15 amp circuit.

OPERATION
1. Press the MOTOR switch to the “ON” position.
2. Fill the spinner head with the desired amount of sugar floss. Never fill the head past the
bottom level of the filler spout.
3. Press the HEAT switch to the “ON” position.
4. Turn the HEAT CONTROL knob to heat setting HIGH.
5. Once floss starts to flow out of the head, reduce the HEAT CONTROL to the green range as
indicated on the METER (too high of a setting will cause cutting of the floss and potentially
clog the head screen)
6. When the amount of floss that is produced starts to slow, add more sugar. DO NOT adjust
the HEAT CONTROL knob setting.
7. NOTE: The typical operating setting on the heat control is in the green range. This will vary,
however due to fluctuations in environmental.

SHUTTING DOWN
1. Press HEAT switch to the “OFF” position.
2. Wait 3-5 minutes for the spinner head to cool down.
3. Press the MOTOR switch to the “OFF” position
In Case of a Malfunction immediately shut-off the MOTOR and HEAT
switches and correct the problem.

TROUBLESHOOTING

1. Bad vibration.
• Check to make sure there are no sugar lumps in the spinning head
2. Motor does not operate, but heater is operating.
• Motor protection has tripped off. Wait one minute and re-start.
3. Floss is being formed with clumps of sugar or floss is forming, but being cut.
• HEAT CONTROL is set at too high a setting.
4. Head is full of sugar but no floss comes out.
• Check the settings of HEAT switch and HEAT CONTROL
• Empty head and follow routine cleaning instructions.

CLEANING PROCEDURE

1. Make sure the unit is turned off for 3-5 minutes before cleaning.

2. Remove the plastic bubble and clean with warm water and dish detergent. Wipe with a soft dish cloth. DO NOT USE ANY TYPE OF SCRUB BRUSH, BRILLO PAD, ETC. This will scratch and damage the plastic bubble. Dry with a clean, soft towel.

3. Remove the metal bowl and plastic mesh insert and wash with warm water and dish detergent. Please use a soft dish cloth. The sugar will dissolve in warm water. Dry with a clean, soft towel.

Popcorn Machine

  • Always wear safety glasses when servicing equipment.
  • Kettle reaches extreme heat during operation. To avoid injury, NEVER touch kettle
    while hot.
  • Any alterations made to equipment by anyone other than certified Paragon personnel
    will void warranty and may also create unsafe working conditions. NEVER make
    alterations to the equipment.
  • Machine must be properly grounded to prevent electrical shock.
  • Do NOT immerse kettle, or any other part of this equipment in water. Doing so may
    damage equipment and prevent it from working properly.
  • Always unplug equipment before cleaning or servicing to prevent electric shock.

OPERATING INSTRUCTIONS
Be sure equipment is connected to properly grounded 120 volt power supply with 15 amp circuit.
Popping
1. Turn on two switches. (Located in the chassis above the door.)
2. Allow kettle to warm for approximately 5 minutes.
3. BULK SUPPLIES: Place one measure of oil in kettle. Immediately add one measure of raw popcorn
plus seasoning salt. Pull lid closed to prevent stray kernels. (Lid is held in place by magnet directly
above the kettle.)
NOTE: Corn and Oil measures:
For an 8 ounce Popper use 2/3 cup of oil and 8 ounces (1 cup) of raw corn.
PORTION PACKS: Cut off top of plastic pack. Dump entire contents in kettle. Pull lid closed to
prevent stray kernels. Use appropriate size pre-measured pack for machine.
4. While corn is popping, keep front operator doors slightly ajar to prevent fogging. Keep hopper door at “out” position to aid in catching stray popcorn.
5. Allow corn to pop until popping ceases, usually when 3-4 seconds lapse between pops. Then pour
remaining popped corn from kettle by rotating handle clockwise 1/3 turn and pulling downward.
6. Repeat steps 1-5 for additional batches.
7. Turn KETTLE switch to OFF position when finished preparing popcorn; POWER or LIGHT switch may
remain ON to display and heat popcorn.
KETTLE WILL BE HOT! Please be sure to avoid direct contact with the kettle during the popping
process!

Cleaning Instructions
All Paragon poppers utilize tempered glass panels, stainless steel cleanout trays, aluminum
corner posts and anodized kettles. These surfaces can be cleaned using vinegar and water
solution. The use of ammonia based cleaners is not recommended. This includes Windex.

  • You will want to note that you should never submerge a kettle in any type of liquid because it has electrical components inside of it that can short out.
  • Paragon kettles are designed to be wiped out with a clean cloth after each use.

SNOW CONE MACHINE

  • Shaver reaches high speeds during operation. To avoid injury, NEVER place bodyparts or objects such as ice picks into or near the shaver head assembly while motor
    is running.
  • We are not responsible for any injuries that may occur due to failure to
    follow safety precautions.
  • Any alterations made to equipment by anyone other than certified Paragon personnel
    will void warranty and may also create unsafe working conditions. NEVER make
    alterations to the equipment.
  • Machine must be properly grounded to prevent electrical shock.

OPERATING INSTRUCTIONS

Shaving Ice
1. Turn POWER switch ON
2. Fill the ice horn with ice.
3. Press and hold the MOTOR switch to activate blades and begin shaving ice.
4. While holding MOTOR switch down, apply steady downward pressure to the ice pusher
5. Release the MOTOR switch when finished.
6. Repeat steps 2-5 for additional batches.
 

Cleaning Procedures
1. Remove all ice from the ice horn and storage compartment.
2. Operate the motor for several minutes to remove any water collection on the cutter head.
3. Turn off the POWER switch. (Not used on all models.)
4. Unplug the power cord from the electrical outlet.
5. Using a clean cloth, wipe down the following items.
• The inner surface of the ice horn (Caution: Sharp Blades)
• The outside surface of the ice horn casting.
• The ice pusher.
• All interior and exterior surfaces.
6. To clean the water collection tray.
• Tilt tray to drain the water trapped in the drain cavity.
• Slip the drain hose off the nipple fitting.
• Lift the tray out of the cabinet
• Clean tray and area below tray with clean cloth.
Note: FDA approved cleaners may be used when required for sanitation. Do not use ammonia
based cleaners on polycarbonate door and/or side panels.
BLADES ARE SHARP AND OPERATE AT HIGH SPEEDS! Please be sure to keep all body parts and anyobjects such as picks or scoops away from the ice horn while POWER is on!
